Grease Traps & Grease Interceptors
These are a basic requirement in many commercial applications, buildings or businesses. Any business, which prepares or serves food, will have a grease trap or grease interceptor. This includes restaurants, hotels, retirement homes, schools, hospitals etc.
Food service grease is created when food is prepared and served. Cooking foods using any types of fat, lard or oil will result in the left over remnants of food service grease in pots and pans as well as the plates, dishes and flatware used for serving. When washing these items either by hand or in a dishwasher, this grease flows out with the water into a grease trap or grease interceptor.
Most commercial kitchens will have a small indoor grease trap located either under the counter or beneath the floor or a much larger outdoor grease trap, which is buried underground.
The build up of the grease in these tanks must be removed in order to prevent the grease from escaping and causing problems within the sewer system in which they are attached. Most municipalities require regular maintenance on commercial grease traps and grease interceptors. This prevents future problems that may arise down stream in the sewer lines or lift stations.
